Hi all! This time, as promised, I will share recipes with you several salads at once, which are delicious both individually and in combination.

And the story of their appearance in our family is as follows. I think I won’t be mistaken if I say that throughout the entire territory of the former Soviet Union there is approximately one list of holiday dishes, which necessarily includes Olivier or Stolichny salads and herring under a fur coat. Our city is no exception in this sense. Often there is also a vinaigrette or beet salad with garlic on the table.

We had a housewarming party, and the guests gathered in different groups for several weeks. Of course, I wanted to feed everyone and surprise everyone. Therefore, each company of guests had its own, each time new, festive menu. And I didn’t include the boring, albeit favorite, salads in it, especially since in the spring I wanted something unusual. It was then that an unchanging tradition arose in our house of preparing these unusual, but at the same time light salads for the festive table.

The filling in this recipe can be absolutely anything, I just like this original presentation. This time I wrapped some kind of Olivier in pita bread. By the way, our recent one is also perfect.

This time my “Olivier” included:

  • potatoes, medium size - 2 pcs.
  • carrots, medium size - 2 pcs.

To be honest, I don’t remember whether I ate it somewhere or came up with it myself, or maybe I just improved it on a whim, but the ingredients in it are:

  • light raisins - 50 gr.
  • salt pepper
  • sour cream for dressing

It is advisable to use low-fat sour cream.

I also definitely make a cheese salad to go with this salad. I learned his recipe in Kyiv, at one of the feasts with relatives. I think I won’t be mistaken if I say that I’m the only one doing this in Baku.

For it we will need:

  • processed cheese (harder) - 2 pcs.
  • garlic - 2 cloves
  • mayonnaise for dressing

I take Russian cheesecakes, like Druzhba. Maybe this salad would be tasty with gouda, for example, but I stick to the recipe as it was told to me at the time.

The air smells like spring and you want something light and unusual. Then I remember the history of the invention of a special salad. This salad appeared by chance, when I just got married, we moved to a tiny rented apartment, I had a lot of free time and I spent it on culinary experiments.

That day there were pancakes for breakfast, and my mother-in-law was expected to visit for dinner. I urgently needed to come up with something light and tasty. I decided to make pancakes with meat and some light salad. I bought cucumbers, tomatoes, white cheese and began to think about how to make an ordinary salad original. I decided to buy more canned corn and focus on the sauce.

Looking ahead, I will say that the dinner was a success, primarily thanks to the unusual salad. And now, actually, the recipe.

Ingredients:

  • lightly salted salmon – 200 g.,
  • olives – 60 g.,
  • cheese - 60 g.,
  • eggs – 5 pieces,
  • orange - 1 piece,
  • red caviar – 1-2 tbsp. spoons,
  • mayonnaise, salt, pepper - to taste,
  • green onions - a little.

How to prepare the salad:

Boil hard-boiled eggs. Separate the whites from the yolks. Grate the whites on a medium grater or cut into thin strips.

Cut the salmon into small pieces.

Peel and fiber the orange and cut into small cubes.

Finely chop the green onions.

Grate the cheese on a fine grater.

Cut the olives into rings.

We lay out the salad in layers, the amount of mayonnaise between the layers depends on your taste, it would be good to use homemade mayonnaise:

1st layer – half of the proteins mixed with mayonnaise,

2nd layer - yolks, add salt, pepper to them, and grease with mayonnaise,

3rd layer – half a salmon, add mayonnaise to it,

4th layer - half the olives,

5th layer - the remaining half of the salmon,

6th layer – grated cheese and a little mayonnaise,

7th layer – finely chopped oranges,

8th layer - remaining grated (chopped) whites with mayonnaise,

"Greek" salad, classic recipe

Ingredients:

  • olives – 200 g
  • tomatoes – 200 g
  • fresh cucumbers – 2 pcs.
  • onion – 1 pc.
  • Feta cheese - 200 g
  • sweet bell pepper – 200 g
  • lemon juice – 2 tbsp. spoons
  • olive oil – 3 tbsp. spoons
  • green salad leaves - 1 bunch

Preparation:

We tear off the washed lettuce leaves into small pieces so that they are clearly visible in the salad.

For the salad we use sweet juicy peppers. Bell peppers are perfect for this salad. Cut it into large pieces.

Cut the tomatoes into slices. Cherry tomatoes can be cut into two halves.

Shred the cucumbers coarsely.

We cut the feta very tenderly and add it to the salad last.

Tear off the lettuce leaves piece by piece.

Chop the onion into half moons.

Place whole green salad leaves on the bottom of a beautiful plate. We scatter all our vegetables on them: tomatoes, cucumbers, olives, onions, sweet peppers. We also carefully lay out the cheese.

Drizzle our salad with aromatic olive oil. Sprinkle with lemon juice.

Snack "Amanita"

Ingredients:

  • chicken egg - 3 pieces,
  • ham - 120 grams,
  • hard cheese - 100 grams,
  • garlic - 2-3 cloves,
  • cherry tomatoes - 15-20 pieces,
  • cucumber - 1 piece,
  • mayonnaise - 1 tablespoon,
  • greens - to taste.

Preparation:

Boil the eggs and grate them. We also chop the cheese.

Cut the ham into cubes.

Grind the garlic in a garlic press.

Mix eggs, cheese, garlic and ham in a bowl. Season with mayonnaise.

Cut the cherry tomatoes in half.

Cut the cucumbers into rings.

We put greens on the dish - it will imitate grass.

Place cucumbers on the greens.

Form balls from the cheese and egg mixture.

We form mushroom stems and place them on the cucumbers.

Place a tomato cap on top.

Decorate the caps with white specks of mayonnaise.

Caesar salad with shrimp

Ingredients:

  • 150 g white loaf,
  • 9-12 king prawns,
  • 6-9 pcs cherry tomatoes,
  • 3-6 tbsp Caesar salad dressing,
  • 3 tablespoons grated Parmesan cheese,
  • 1 clove of garlic and a bunch of lettuce,
  • 1 tbsp vegetable oil.

How to prepare the salad:

The salad is prepared before serving so that the croutons do not get soggy.

Cut the white loaf into small cubes or cubes, sprinkle with garlic crushed through a press (or the loaf can be grated with garlic), salt (the loaf can be grated with garlic), sprinkle with vegetable oil, mix and place on a baking sheet, put in an oven heated to 150 degrees and dry until crunchy .

We clean the thawed shrimp, lightly fry them on both sides in a frying pan with oil until lightly browned on each side.

We tear the lettuce leaves into medium pieces with our hands, put them on a plate, pour a third of the dressing, sprinkle a third of the cheese, put the tomatoes cut in half on top, pour over the sauce, sprinkle with cheese, put the shrimp on top, croutons on them, pour in the sauce, sprinkle with cheese.

Serve Caesar salad with shrimp to the table immediately after preparation.

Salad with tomatoes and eggplants

Ingredients:

  • eggplants - 2 pcs.,
  • tomatoes - 6-7 pieces,
  • onion - 1 piece,
  • garlic - 2-3 pieces,
  • greens - a bunch,
  • salt - to taste,
  • black pepper, seasonings - to taste,
  • white balsamic vinegar - to taste,
  • vegetable oil - to taste.

Preparation:

We take eggplants and tomatoes in a ratio of 1:3. Cut the eggplants into cubes and boil for 10 minutes in salted water, remove with a slotted spoon. You need to remove their bitterness, but not overcook them.

Fry the eggplants in a frying pan until done. Let cool.

Chop the tomatoes and mix with the eggplants.

Add finely chopped onion, dill, grated garlic, salt, black pepper. Season with balsamic white vinegar (can be apple) and sunflower or olive oil.

You can serve the salad with eggplants and tomatoes warm, but it is better when it is infused and soaked.

Classic Olivier salad with sausage, fresh and pickled cucumbers

Ingredients:

  • 300 g mayonnaise,
  • 200 g boiled low-fat sausage,
  • black pepper and salt,
  • potatoes – 5 pcs.,
  • fresh greens,
  • carrots - 1-2 pcs,
  • 300 g green canned peas,
  • eggs - 6 pcs,
  • fresh cucumbers – 2 pcs.,
  • pickles - 2 pcs.,
  • olives - for decorating the salad.

Thoroughly wash the potatoes and carrots with a brush. Place the vegetables in a saucepan, add water so that it completely covers them, and put on the fire. Cook for 20 minutes over medium heat. Then drain the water and add the vegetables. cold water. And again - drain the water.

Place the eggs in a small saucepan, fill them with water and salt. Cook over low heat for ten minutes. Drain the water and immediately place under running cold water.

Peel the potatoes and chop them into cubes. We clean and cut the carrots in the same way.

Wash fresh cucumbers, dry them and chop them into small pieces.

Grind the peeled eggs using an egg slicer.

We cut the boiled sausage in the same way as other products.

Rinse the onion and herbs. Finely chop.

Open the jar of peas and drain the marinade.

Place all the chopped products and peas in a deep bowl, pepper, salt, add mayonnaise and mix gently.

Ingredients:

  • chicken (breast) – 200 g.,
  • canned beans – 100 g.,
  • canned corn – 100 g.,
  • Chinese cabbage - a few leaves,
  • salt, seasonings - to taste,
  • mayonnaise - to taste,
  • croutons, preferably “our own production” - for decorating the salad,
  • greens - a bunch.

Preparation:

Slice the boiled chicken breast. Place in a deep bowl.

Add canned red beans and canned corn.

Cut the Chinese cabbage into strips and add to the salad container.

Place croutons, parsley, dill in a bowl.

Add salt, seasonings and herbs to taste.

Mix everything carefully.

The salad must be prepared before serving.
