Light summer cake “Broken glass. Jelly with sour cream broken glass recipe with photo

Dessert “Broken Glass” belongs to the category of jelly-like dishes and is rightfully considered a healthy and low-calorie treat. The fact is that its two main components are sour cream and gelatin. Fermented milk products are rich in potassium and calcium, and gelatin is able to bind and remove various harmful substances from the human body.

The dessert got its name because of its bright appearance. It is served in transparent bowls and through the thin glass you can see how thick sour cream jelly (or chocolate) contains small pieces of jelly of other shades, creating a picture similar to a kaleidoscope or colored mosaic. By the way, “Kaleidoscope” or “Summer Mosaic” are other names for this unusual dish.

“Broken Glass” is primarily a children’s dessert, but there are more “adult” recipes with champagne or white wine. Also, the treat can be prepared not in portions, but in the form of a large cake, supplemented with vanilla or chocolate sponge cakes.

I decided to please you with excellent recipes for such a delicious and easy in every sense cake called broken glass. It is called so because the filling in it looks like small fragments of multi-colored glass. And in cross-section it is very similar to glass mosaic. This delicate treat combines the melting taste of jelly and the aroma of fruit very well; these ingredients literally complement each other and the combination makes an excellent dessert.

The recipe for cooking with sponge cake is considered a classic, but there are also other recipes that have already become a favorite among those with a sweet tooth. And of course, among these recipes, the most popular and simplest methods of preparing broken glass appeared. Below I will try to give examples of the most popular and delicious broken glass cake recipes.

This recipe will be no bake. Let's start preparing broken glass with the simplest recipe that does not require complex manipulations. Before we begin, let's prepare all the necessary ingredients. Which can be easily found in any supermarket.

Ingredients.

Jelly 3-5 colors.

A packet of gelatin.

Sugar-100 grams.

Vanilla-10 grams.

Sour cream-500 grams.

Multi-colored jelly. You can buy it ready-made. Or you can cook it yourself. If you can’t find the jelly of the color you need, then buy dry jelly and prepare it yourself. The jelly recipe is very simple, pour the required amount of water, mix the powder with water and put it in the refrigerator.

I couldn't find any yellow jelly so I took a packet of dry orange jelly and made it myself.

It is advisable to start cooking by preparing gelatin. Which needs to be diluted with a glass of plain water. Water temperature is room temperature.

While gelatin dissolves in water. Let's prepare the sour cream base. Mix sour cream with sugar and vanilla.Beat well using a whisk or mixer. It is necessary to achieve complete dissolution of sugar in sour cream. I made this using a mixer, but you can also use an immersion blender.

In the meantime, the gelatin has dissolved in the water and you need to heat it up a little, bring it to readiness, so to speak. Gelatin cooks very quickly, so you shouldn’t leave it for long.

Heat the gelatin without bringing it to a boil, stirring constantly with a spatula or spoon. As soon as the gelatin reaches a state of transparency, that is, completely dissolves in water, immediately remove it from the stove. And let it cool to room temperature.

While the gelatin cools, prepare the jelly and cut it. You can cut it into any shapes you want.

How to easily remove the finished jelly from the mold

In order to easily remove the jelly from the dish, you need to warm it up a little, literally just a little bit. Immerse the glass or bowl in hot water for 5-10 seconds. And the jelly will slip out of the bowl very easily.

Mix the cooled gelatin with sour cream. Pour the gelatin into the methane in a thin stream and stir constantly with a mixer or whisk.

You can choose any glass, plastic, or silicone mold for the cake, it doesn’t matter. Whether it will be square, round or oval is up to you. You can distribute the resulting mass into several small molds or cups. The most important thing is that the surface inside the mold is perfectly smooth. This will allow you to remove the finished dessert without damaging its appearance.

You can line the bottom and walls of the mold with food. And if the stacks are smooth, then the finished dessert will pop out without the use of film.

That's it. Now we put the pieces of jelly into a mold, fill it with sour cream and jelly mixture, mix it a little and put it in the refrigerator for 4-5 hours, or better yet, overnight. To be sure that the cake is completely frozen. Although for me it froze in 3.5 hours.

We take the dessert out of the refrigerator, cover it with a suitable plate or dish on which we will serve this treat, turn it over and shake the cake onto the dish. All that remains is to cut into pieces and start tasting this truly delicate cake.

If anything was unclear, watch the video, which describes in detail each step in preparing the Broken Glass cake.

Biscuit recipe

You will need it not only for making Broken Glass cake, but many other dishes also very often require sponge cakes. And the biscuit itself is a very tasty treat. There are a lot of cooking recipes, but I will give you the simplest one that even a beginner can handle.

Ingredients.

3 eggs.

Flour glass.

Sugar glass.

Baking powder.

Cooking process.

Separate the yolks from the whites.

Divide the sugar into two equal halves. One part goes to the yolks, and the other to the whites.

Beat the yolks with a mixer until they change color from yellow to white. Continue beating the yolks until a light foam appears.

We go through the same story with squirrels. However, more time needs to be devoted. Beat the whites until a stable thick foam appears. The foam should be so thick that marks from the mixer beaters remain on its surface.

Now these two consistencies need to be mixed. Add the yolks to the whites and mix gently with a spoon.

Sift the flour directly into the bowl with the eggs. Add baking powder. Mix the dough with a spoon until the mixture becomes homogeneous.

Pour the batter into the prepared pan. And put it in a hot oven. Baking temperature is approximately 120-150 degrees. The cooking time for the biscuit depends on the temperature and shape. But on average it takes no more than 15-20 minutes.

It’s very easy to check the readiness by piercing the cake in the middle with a toothpick; if the toothpick is clean and there is no dough on it, then the biscuit is completely ready. You can remove it from the oven.

Cake broken glass with cherries and peaches

This dessert is quite easy to prepare. And the ingredients are easily available. Cooking time is only 3-4 hours.

Ingredients.

Ready-made jelly, a bag of gelatin, 500 grams of sour cream, sugar, fresh or canned peaches, fresh or frozen cherries, vanilla, sponge cake, coconut flakes.

Cooking process.

Let's prepare gelatin. Pour the gelatin packet into a bowl and add a glass of water. We wait until it absorbs the water. As soon as the gelatin has absorbed all the water, add another half glass of water and place the bowl of gelatin on the pita bread. Bring it to a liquid state without bringing it to a boil. And cool to room temperature.

Place the sour cream in a bowl, add half a glass of vanilla sugar and mix with a mixer for about 5 minutes. This way all the sugar will dissolve and the sour cream will become more airy and liquid.

Freeform jelly mode. Sponge cake mode into pieces no larger than 3 cm.

Place the prepared peaches and cherries in the mold where the cake will cool. Then biscuit pieces and jelly. You don’t need to worry too much about the layout, since at the end you will have to mix everything well.

Mix the cooled gelatin with sour cream and beat well. Pour the sour cream into the mold with fruit jelly and biscuit, mix and put in the refrigerator for 3-4 hours.

Before taking out the cake, lower the mold into hot water so that it comes away from the walls of the mold.

Before serving the dessert, sprinkle it with coconut flakes. Now you can serve the treat to the table and make the kids happy. Bon appetit.

Recipe with condensed milk and cream

Recipe with condensed milk and cream video

During my student days, a cake called “Ukrainian Tsitska” was popular (I apologize for the not quite decent syllable, but you can’t remove the words from the song). The jelly cake was prepared in a deep bowl with a rounded bottom, then turned over onto a dish and brought into the guests’ room with a deliberate shake of the tray so that the “tsitska” would shake expressively.

In general, the eroticism of this recipe is a very controversial point, but that was the case. And it was in great demand: everyone prepared it with gusto and delight. However, times and tastes change, and now this same cake is nobly called " Broken glass". I wonder what you call this dessert?

The substance that allows cold no-bake desserts to set, gelatin, was invented in 1845 by engineer Peter Cooper - it was then that he received a patent for a method for preparing sausages, hams and other meat products, the individual parts of which are held together using a stable food “glue.” .
Several decades later, Pearl Waite, another entrepreneur, figured out how to make desserts using gelatin. The method turned out to be so simple and accessible that it seemed that the invention would be an instant success, but this did not happen - and after many unsuccessful attempts, the author of the idea sold it to the next owner, Woodworth. He, by the way, also did not immediately manage to give impetus to gelatin desserts - in the story of his success there was a moment when a desperate entrepreneur offered his assistant to buy a patent for sweet gelatin desserts for only $30. The assistant refused, believing that the whole idea was a complete failure, however, it was from that moment that the popularity of gelatin began to grow. Housewives across America cooked, experimented, exchanged recipes and fell more and more in love with a simple, affordable and very interesting way to diversify the sweet table at home.

Cake "Broken Glass" very positive, joyful and cheerful. For a summer dessert - just perfect. It’s easy to prepare, but it’s so delicious! Light, unobtrusive, almost imperceptible!

Ingredients:

3 packs of jelly of different colors;

fruits - optional (bananas, kiwi, oranges, tangerines);

0.5 liters of sour cream;

1 cup of sugar;

20 g gelatin.

Prepare jelly according to package instructions. I usually slightly reduce the amount of water with which I dilute the dry mixture - it turns out a little denser, but the cubes are clearer, more “broken.” Don’t forget that each color is diluted separately; pour into a shallow, flat bowl. After hardening, cut into pieces in the form of squares or diamonds, place in a deep bowl in which your cake will harden.

Gelatin should be diluted with a small amount of cold water and left for 5-10 minutes until it swells.

After this, you need to heat it over low heat until completely dissolved (do not boil!), Cool slightly.

Beat the sour cream with sugar with a mixer. I take store-bought, it seems to taste better. You can use market sour cream - then the cake will turn out fluffier (market sour cream whips better), but fattier. You can take cream, kefir or even yogurt, but do not forget to adjust the amount of gelatin.

Add gelatin in a thin stream, while immediately stirring the sour cream, continuing to beat it with a mixer.

Place multi-colored jelly cut into cubes into sour cream.

Stir and add fruit if desired. Place in the refrigerator for 4-7 hours.

Once completely frozen, place on a plate.

I’ll dwell a little on getting the cake.

You can go three ways, you choose the one that is easier for you.

1. Place the bowl with the cake in a bowl (full sink) with hot water for 5-10 seconds and turn it over onto a plate. The method produces a beautiful, even surface of the cake, but there is a risk of overdoing it - the top layer will leak.

2. Initially line the bowl with cling film and remove the cake by pulling on its edges.

The downside is that you are unlikely to be able to line the bowl perfectly; there will be “wrinkles” on the cake.

3. You can prepare the cake in a springform pan. Everything is fine, but when removing the removable side, the edges of the cake will have to be separated from the mold with a knife, and often cut cream remains on the mold, the cake looks sloppy.

A morning started with pieces of this cake promises a great day!

No matter how much cooking skill a housewife possesses, there are times when there is absolutely no desire to cook anything. What to do if guests are about to arrive, but there is no dessert yet? In this case, only a jelly cake and broken glass can save the situation. It doesn't need to be baked at all. This fact in no way affects its attractiveness. Bright, beautiful and unusually gentle, any person will like it, regardless of age and preferences.

Cooking broken glass cake: recipe with photo

Ingredients

Jelly 3 packs Sour cream 0 liters Sugar 240 grams Vanillin 3 grams

  • Number of servings: 1
  • Cooking time: 40 minutes

Cake broken glass with sour cream

  • 3–4 packages of yellow, green and red jelly;
  • sour cream – 0.5 l.;
  • 240 g sugar;
  • vanillin on the tip of a knife.

Recipe with jelly

Preparing the dessert begins with the formation of beautiful, even pieces of jelly.

  1. Pour the contents of one pack into a small container and fill with hot water. Use less water than indicated in the recipe on the back. Stir until the powder is completely dissolved. Pour into a flat mold so that at the end of hardening you get beautiful and even cubes. Repeat the same steps with the remaining jelly bags.
  2. When all the colors are poured into the molds and cooled, place them in the refrigerator to allow the jelly to set.
  3. While the jelly hardens, prepare the gelatin. Dilute it in a metal bowl with the amount of water indicated on the package. Leave it until it swells completely.
  4. Transfer the sour cream into a container convenient for whipping, add sugar and vanillin. Beat for several minutes, gradually increasing the speed until the mixture thickens thoroughly.
  5. Remove the jelly molds and cut into even pieces. Transfer to a container for future dessert and stir so that the colors alternate beautifully.
  6. Place the prepared gelatin in a water bath and, after complete melting, add to the sour cream. Mix everything thoroughly and fill the mold with jelly.
  7. Stir the resulting mixture so that each piece of jelly is completely covered with the sour cream mixture. And place in the refrigerator until completely cool.

The cake can be made in any form, this will not affect its beautiful appearance and, accordingly, taste. You can also add fresh fruits, nuts, cookies and even candy to the jelly cubes. The taste of this cake reminds us of childhood, as our mothers and grandmothers prepared it very often.
