Step-by-step preparation steps:

  1. Dissolve lemon (1 teaspoon) in hot water (2 teaspoons).
  2. In a separate bowl, mix the water and citric acid well, add salt.
  3. Sift the flour onto the table in a heap and make a small depression in it.
  4. Gradually pour in the liquid and knead into a stiff dough. It should not stick to your hands.
  5. Form the dough into a ball and place it in a bowl.
  6. Cover it with a towel and leave for half an hour.

Let's start working with fatty ingredients:

  1. Remove margarine and butter from the refrigerator and wait until they become soft.
  2. Transfer the mixture into a plastic bag and shape it into a rectangle using a rolling pin and cool.
  1. Take the dough out of the bowl onto the table and roll it out into a 1 cm thick square. Try to make it a little thinner at the edges.
  2. Place a rectangle of butter in the center of the layer (see photo).
  3. Without stretching, cover the butter with one corner of the dough, then the opposite one, and so lay all four sides.
  4. You will end up with an envelope that needs to be rolled out again to a rectangular shape.
  5. Fold the layer into 4 layers, like a book, and wrap it in food paper.
  6. Place in the refrigerator for 30 minutes.
  7. Take out and roll out again to give the dough its original shape - a rectangle.
  8. Fold it like a book, in 4 layers, and repeat the cooling procedure, which lasts half an hour.
  9. Do the described technique at least 4 times, so you will ensure that the puff pastry will have about 200 layers, and the baked goods will be super fluffy.
  10. The last folding is completed, and you send the workpiece to the refrigerator for 12 hours (more is possible).

When starting to prepare baked goods, take out the yeast-free puff pastry and separate the desired size piece from it. Divide the rest into several portions and place in bags. Store the preparations in the freezer.

If you want your baked goods to be airy and crispy, remember a few rules. Firstly, do not get carried away with emergency defrosting, as this will only spoil the product.

Simply place the unwrapped puff pastry onto a board and let it rest for a few hours. You can speed up the process a little and call on a convector or other heat source to help.

Do not use a microwave oven to defrost dough.

  6. Transfer the dough to the prepared baking sheet. Place 6-7 apple slices in the center of each rectangle, placing one on top of the other. Leave a margin of 1-1.5 cm from the edges.
  7. Using a brush, brush the apples with half the jam. Grease the empty edges of the rectangles with yolk mixed with a couple of tablespoons of water.
  8. Bake for 10-12 minutes until the puff pastries are golden brown. Remove the finished puff pastries from the oven, brush with the remaining jam and let cool.

  • almond petals - 2 tbsp.

  • egg yolk - 1 pc.
  • milk - 2 tbsp.
  • sugar - 1 tbsp.

Preparation:

  1. Thaw the puff pastry and lightly roll it out on a floured work surface.
  2. Preheat the oven to 200º and line a baking tray with baking paper.
  3. In a bowl, mash the cottage cheese with a fork and mix thoroughly with powdered sugar and a lightly beaten egg.
  4. Add the berries from the jam (if we use fruit jam, they need to be finely chopped), grated zest and, if desired, chocolate, and mix again.
  5. Place the layer of puff pastry on a baking sheet lined with baking paper and place the curd filling in the center, leaving a space of 3-4 cm from the edges.
  6. We wrap the free edges and pinch at the corners. It should look like an envelope, open in the middle.
  7. In a bowl, beat the yolk, milk and sugar, and use a brush to brush the edges of the pie.
  8. If desired, sprinkle the filling with almond petals and press lightly with your palms.
  9. Bake in a preheated oven for 10 minutes, then reduce the temperature to 170º and bake for another 20 minutes until golden brown.
  10. After cooling, sprinkle the finished cake with powdered sugar.

5. Cinnamon Puff Pastry Spirals

Preparation:

  1. Defrost the puff pastry according to the instructions on the package and first prepare the semolina cream.
  2. In a saucepan, heat the milk and sugar over low heat, stirring occasionally with a whisk.
  3. As soon as the milk begins to boil, add semolina in a thin stream while stirring vigorously with a whisk.
  4. When the cream begins to thicken, add lemon zest and continue stirring.
  5. After the semolina acquires the consistency of custard, remove the saucepan from the heat, add the butter and stir until it is completely dissolved.
  6. Preheat the oven to 180º and after the cream has cooled slightly, add the eggs one at a time, thoroughly mixing with a whisk after each egg until a homogeneous, smooth mass is formed.
  7. Place a layer of puff pastry into a rectangular oblong cake pan so that one edge protrudes slightly more than the other.
  8. Place semolina cream inside, plum jam on top, and distribute along the bottom of the mold.

The amazing tenderness and aroma of the baked goods is ensured by a unique yeast base. With its help, baked goods acquire excellent taste properties. Preparing the dough does not require great culinary skill - only attention, quality of products, adherence to the technological process.

Strudel ingredients:

  • fresh apples - 800 g;
  • regular sugar - 150 g;
  • almonds - 100 g;
  • cinnamon - 7 g.

Puff pastry ingredients

  • sifted flour - 600 g;
  • yeast (dry early ripening) - 20 g;
  • vanillin - 20 g;
  • homemade butter (margarine) - 350 g;
  • high-quality eggs (1st grade) - 4 pcs.;
  • fine sugar - 50 g;
  • bottled water or whole milk - 100 g.

Preparing the dough

  1. We sift the flour at least twice, remove impurities and lumps, and enrich the product with oxygen. These are the main conditions for obtaining a tender and airy dough.
  2. Heat the milk until warm (not hot!), dissolve 25 g of sugar, dissolve the yeast. Stir the mixture, cover with film, leave in a warm place for 15 minutes to ferment.
  3. Sift the flour onto the table, combine it with the remaining sugar, vanilla, and a pinch of salt. Add pieces of butter or margarine and chop with a knife until crumbs form. We build a hill with a small “crater” out of flour.
  4. Meanwhile, a lush “cap” has already appeared on the yeast composition. Pour in the remaining milk, a pinch of salt, add the eggs, mix the products, place the mixture in the center of the flour “volcano”, knead the dough, leave to rise. Knead the resulting mass several times.
  5. Place the “ripe” product in the refrigerator for two hours, then roll out the sheet to a thickness of 8 mm. We conditionally divide it into three sections, slightly pressing (fixing) the borders with a knife. Lubricate the middle part with butter softened to the consistency of sour cream.
  6. Cover the area treated with fat with the left half of the cake. We apply the same oil layer to it and cover it with the right side of the layer.
  7. We roll out the layer again according to the recommendations given, repeat the process several times, we get 32 ​​layers of dough. Before use, leave the product in the refrigerator for several hours.

Making apple strudel.

  1. Cut the peeled apples into slices, place them in a frying pan with butter, simmer for 7 minutes, add the almonds, sugar and cinnamon chopped in a blender, and finish cooking after two minutes.
  2. We take out the puff pastry, roll out the layer thinly (2 mm), pointing the rolling pin exclusively in one direction, without damaging the delicate layers of the pastry.
  3. Spread the apple filling (only cooled!), leaving the edges of the dough free. Roll the sheet of fruit into a tight roll and place it on a baking sheet lined with baking paper.
  4. Leave the cake for 40 minutes. for proofing. We always do this before baking yeast dough. This is its difference from a non-yeast product! Place the product in a heated (180°C) oven for half an hour.
